2022 Prosecco Col Fondo

Vinea Marson’s small-batch, ancestral method Prosecco / Luceo col fondo (literally meaning ‘with the bottom’), champions a natural & savoury style of wine. Unlike its fruit driven counterpart the col fondo does not undergo disgorgement & dosage with the lees remaining in bottle.

TASTING NOTES

The resulting cloudy wine is full of savoury aromatics, pleasant bread and lemon tart characters. With age, yeast autolysis character dominates – with flavours of brioche & toffee toast – making it a wonderful wine to age.

FOOD MATCH 

Proscuitto San Daniele and other rich meats. 

CELLARING 

Its not an oxymoron to say that this is an age-worthy prosecco. Enjoy now, or age for up to 10 years, to 2034 as yeast autolysis characters reveal themselves.
