2023 Prosecco Col Fondo

Vinea Marson’s small-batch, ancestral method Prosecco col fondo (literally meaning ‘with the bottom’), champions a natural & savoury style of wine. Unlike its traditional method counterpart, the wine does not undergo disgorgement & dosage with the lees remaining in bottle.

TASTING NOTES

The resulting cloudy wine is full of savoury aromatics, pleasant bread and lemon tart characters. With age, yeast autolysis character dominates – with flavours of brioche & toffee toast – making it a wonderful wine to age.

FOOD MATCH 

Proscuitto San Daniele and other rich meats. Or combine with 1 part Campari to 2 parts Col Fondo for 'The Mario' - the boss' aperitivo of choice! 

CELLARING 

Its not an oxymoron to say that this is an age-worthy prosecco. Enjoy now, or age for up to 10 years, to 2034 as yeast autolysis characters reveal themselves.
