2025 Prosecco

ABOUT
Inspired by the Marson family’s north- eastern Italian roots, the Prosecco is a crisp, dry sparkling made in the traditional method, spending one month on lees prior to disgorgement & dosage. From a short & sharp vintage, the 2025 Prosecco is made from fruit grown on the banks of the Ovens River in the Alpine Valleys. 

TASTING NOTES 
Displaying aromas of lifted alpine flowers, a freshness asserts itself on the palate with flavours of fresh cut Granny Smith apple & bitter lemon spritz complemented by a rich, creamy mousse. A hint of amaro bitterness then leads to a balanced, dry & savoury finish – a testament to the addition of 1.5% pinot bianco made prior to secondary fermentation.
